2017 Margaret River Cabernet Sauvignon
The 2017 Margaret River Cabernet Sauvignon oozes aromas of lifted cassis & spice underlined with dusty eucalypt nuances. The truly varietal palate is generous and finely structured.
Harvested at 12.8 degrees baume, then crushed and fer-mented on skins in traditional open fermenters and stainless steel tanks, the wine was then transferred to French oak hogsheads for malolactic fermentation, followed by a further 16 months ageing in French oak. This Cabernet has cellaring potential of beyond 10 years.
Delicious with venison, rich meaty dishes & full-flavoured cheeses.
